MAMA MIA! I’M COOKING ITALIAN FOOD
Today I tried making two authentic Italian dishes, Fettuccine Alfredo & Ricotta Cavatelli and Italian Sausage in Sage Browned Butter. Served with Ruffino Red Wine…. Love It!!!!!
Fettuccine Alfredo began as regular fettuccine al burro until the Roman restaurateur Alfredo di Lelio enriched it with a double and a triple dose of butter for his pregnant wife, who could not keep anything down. The dish was so delicious he kept it on the menu of his restaurant, Alfredo all Scrofa, in Rome. Mary Pickford and Douglas Fairbanks had it during their 1920 honeymoon trip to Rome, loved it, brought the recipe back, and served it to their friends when they returned to Hollywood. The dish is used as the base for many different versions, topped with shrimp, broccoli, asparagus, and more. Since butter separated readily when heated, cream is added to make the sauce creamier.
I was thrilled when my Fettuccine Alfredo came out so well! My husband and children were raving about it! Yes, I’m smiling from ear to ear. Three Italians loving MY Italian cooking! Woo-Hoo!!!!!!
Next the Ricotta Cavatelli and Italian Sausage in Sage Browned Butter… First I had little time to scope our area for the Cavatelli. So it came down to replacing the Cavatelli with Tortellini. And the Italian sausage, I chose mild for my first try at this.. This is an old Italian dish.. My try at this dish came out beautifully my sweet Italian husband says. Now this is a compliment indeed. I will definitely search out where to purchase Cavatelli for my next try at this.The Tortellini was good but the Cavatelli would be best. I’m kind of proud of my attempt at these two Italian favorites. I am sure there will be many more dishes I try my hand at cooking up soon. And my my, I absolutely Love Italian Food! And Wine!!!!! Buonissimo!!!! ( very good)
